DNA preparation from pure strains Fifty-five reference strains belonging to 13 nearly Bifidobacterium species (Table 1) were used in this study.

Seven species were from human origin, while six others were from animal origin. The Bifidobacterium strains were subcultured in Brain Heart Infusion (BioRad, Marnes-la-Coquette, France) at 37°C for 48 to 72 h under anaerobic conditions and DNA was extracted as described previously [15]. Milk was prepared for maturation by addition of cream, starter and surface flora. Temperature was increased to 22°C. Animal rennet was added (Day 0). On the next day (Day 1), the following steps were successively performed: molding, a first manual turnover, a manual salting and a second turnover. During that day, pH decreased from 6.5 to 4.3 while temperature remained stable (22°C).
